3 Ballerina Approved Sweet Treats

For the record, YES, ballerinas eat food!

In fact, listed below are 3 favorite desserts (and their recipes) from yours truly and two other dancers at The School of Pennsylvania Ballet!

  1. Avocado Brownies made by Emelia Moorman

1/4 cup pureed or well-mashed avocado
1/4 cup extra-virgin olive oil
1 cup white whole wheat flour (or all-purpose flour)
1/2 cup unsweetened cocoa powder
3/4 cup cane sugar (or granulated sugar)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup water
1 1/2 cups vegan dark or semisweet chocolate chips

Preheat oven to 350 degrees F. Grease an 8-inch square pan or use baking paper.

In a large mixing bowl, whisk together the pureed avocado and olive oil until smooth. Add in the flour, cocoa powder, sugar, baking soda, salt, and water. Stir until smooth. Fold in 1 cup of the chocolate chips.

Pour into the prepared pan and spread the batter evenly throughout the pan. Sprinkle with an additional 1/2 cup of dark chocolate chips on top. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out mostly clean (there may be some melted chocolate chips in there).  If you overbake, the brownies will have a cake-like texture.

Remove and let the brownies sit out for at least 20 minutes before serving. Cut and serve, or cover and store for up to 3 days.

2. Banana Ice Cream made by Bailee Cudmore

1/2 cup frozen almond milk mixed with 1 Tbsp sweetener of choice, vanilla extract, and salt. Put in Tupperware and freeze.

1 frozen banana

1/2 cup or more of additional frozen fruit of desire

Generous handful of spinach or greens

1 spoonful nut butter of choice* (I used creamy almond butter)

1 scoop protein powder* (I used Garden of Life RAW plant protein)

1/4 cup oat flour (grind 1/4 cup oats into flour in food processor before

To get frozen almond milk mixture out of Tupperware, run over some warm water and just pop it out. Place all ingredients in a high speed blender or food processor and blend until thick! It is like soft serve ice cream….I am telling you. You will never make a smoothie the same again! The key is the frozen almond milk!

Feel free to experiment with different ingredients in it!

3. Creamy peanut butter made by me!

1 jar of peanut butter

1 spoon

Eat it!

Happy baking and eating!
